What's for dinner?

We try to have fish once or twice a month. It is good for you. Here is a recipe that my sister gave me. It is quick and tasty.

1 lb Tilapia, cut into 1 inch strips (about 5 fillets) salt and pepper to taste
1/4 mayo or less depending on preference.
2 lemons cut into wedges
2 Tbsp. flour
1 cup. Panko break crumbs
2 tbsp extra virgin olive oil.

Preheat oven to 450. Mix mayo with juice from 2 lemon wedges (about 1 tbsp). To bread fish, place mayo misture, flour, and panko on 3 different plates. Dredge fish in flour until thoroughly coated, then in mayo misture, then in panko. Transfer breaded fish to a baking pan, drizzle with oil. Bake until fish strips feel firm--about 8 min. Move fish to top of oven, broil until fish is golden brown--about 1 min. Rotate the baking sheet for even browning. Serve with tartar sauce and lemon wedges.
